So my mate Kylie emailed me this eggplant recipe that she found a while ago, so I put it on the list and cooked it today. It seemed pretty different so I ensured I had basil and cooked the dish.
It was okay, I liked the head and the honey sweetness, but I’m not sure about the mince – I used chicken mince.
So I did eat my meal, but I didn’t need to have left overs the next day. Dish number 41 is now done!
