Eggplant dish 50: White bean eggplant balls
So this dish has been planned for number 50 as my sister decided it is unusual and tastes great – and as she kindly volunteered to cook the dish it was definitely a goer.
So before we went on our yearly holiday we went to my sisters (this blog post is a little delayed) and she cooked the unusual eggplant dish.
They were also accompanied by an excellent salad and garlic bread and potatoes.
We had an excellent meal, hosted by Karen with mum and Timmy also there. It was a really nice way to end the year and the challenge. Finally finished – this challenge was not for the fainthearted.
