So last week this is how I chose to have my eggplant. It was pretty good and really healthy, although I found the chickpea’s a bit dry. I ate some of the left overs but not all.
After cooking the onion, garlic and ginger and then the cumin and rest of the spices I added the sweet potato and cooked it all a bit. Then I added the eggplant, tomatoes and other ingredients.
After adding in the other ingredients including the tomatoes and chickpeas it is cooked and then ready for eating.
So eggplant dish 10 is a winner, but I probably wouldn’t hurry to cook it again. Interestingly, I’ve found another eggplant dish that is really similar but with carrot as well, and no prunes (but I didn’t add in prunes to this recipe). Only 40 more eggplant dishes to eat. I’m aiming for another couple before going to Greece for my holiday and then as much eggplant as I can while in Greece.
