So in my veggie box last week (I get a weekly yummy fruit and veggie box from Taste by TNT), I got three little lady finger eggplants. So small and yummy looking but what to do with them? I do like the little challenges Taryn likes to give me, so I googled some ideas and they are super easy to roast. You just cut them in half, add some oil and cook for about 30-40 min in the oven. Perfect with a Sunday roast I thought.
So I cooked some lamb and roast veggies including asparagus and the eggplant. I had most of the eggplant with Timmy just getting a little eggplant. It was yummy, but Tim didn’t like it. I’m thinking it might be because I didn’t salt it. I’m not sure as I never salt it but I could taste a bit of bitterness and I know people who always salt there eggplant so maybe he is more sensitive to it. Perhaps I should salt more? I’m not sure. Do you always or never salt your eggplant?
