Eggplant 37: Falafel sandwich with eggplant
So I’m at an event and I have a falafel sandwich. I’m eating it and yep I bite into some eggplant. I open up the sandwich and check it out and there is a stack of eggplant – probably roasted initially. I’m like, this so counts to my challenge. What a great surprise.
So I go over and get a couple of pics of the actual falafel sandwich.
So it was really yummy. Eggplant way number 37 is done and dusted. Oh and this was the day (over 9 months into the challenge) someone decides to tell me what an eggplant emoji means. Lucky there are no emoji’s on this website.
