Eggplant dish 3: Crumbed eggplant with tomato

I chose this dish as my number 3 dish as it is an old fav. Basically you cut tomato and onion and then you cook the sliced eggplant inside it. Once cooked you coat in crumbs and parmesan cheese and then cook it in a little oil. Yumo – its really one of my old time favs. I now really want to cook this again. The good thing is there is always left overs for the next day. It’s a nice light meal.
