Eggplant dish 20: Aubergine special
So we are at lunch at a taverna for the Big Blue swim and aubergine special is on the menu. I ask what it is and I’m told sliced eggplant, mince, tomato, onion and garlic, a bechamel sauce and finally it is backed in the oven. So I decide to order it and so do a couple of others.
It was huge and super yummy.
Note to self: Do not eat Eggplant special (and then ice cream) when I have to swim 2.5km after. It is not a good combination – or it was too big and it was there sitting on my tummy. So no eggplant for lunch for me today.
