Eggplant dish 2: Moroccan beef-stuffed eggplant
Today it was eggplant dish 2 for lunch. I have a new recipe book so decided to try it out. I thought there was a bit too much tomato but it tasted pretty yummy.
Above are pics from when I first put into the oven and then on my plate (not sure why it is quite dark). Hubby didn’t really like it, but I have left overs for dinner tomorrow night so I’ll definitely be eating it again.
Next week I’m planning on cooking an oldie but a goodie recipe. I’m looking forward to it.
