Eggplant dish 15: Pappardelle with tomato, eggplant and garlic
As I’m pretty tired from my flight I decided to have lunch at the hotel. I had already been out and about and done the hop on, hop off bus as well as the archaeological museum which is pretty close to my hotel. And there is an eggplant dish on the menu – how awesome.
So I order the dish. It is really good, but doesn’t really have tomato slices (which is probably a good thing). The dish is huge.
That was definitely a winner. So happy with lunch. I’ve now had eggplant everyday this week except Monday. I wonder what is on tomorrow’s menu. Maybe, on my swim trek I need to warn everyone of my eggplant quest or they might think it is weird (I definitely get quite excited when I see eggplant). Let’s hope I keep finding new ways with eggplant to put a big dent into this challenge.
