Eggplant dish 13: Eggplant parmigana
As I’m going on holidays in Greece (for a swim trek), I go wait for my plane in the Qantas lounge, mind you the flight is way after my normal bedtime and is at 10:50pm but Timmy dropped me off a bit after 8pm as any later it is way after his bedtime as well. So I didn’t have dinner as I knew there would be yummy food in the lounge (and also dinner at midnight on the plane).
I walk in and there is eggplant. Oh yay – dish number 13 is now sorted – and quite unexpectedly.
Oh yum, so happy with that and I haven’t had eggplant parmigiana this year either. Unfortunately it was a little cold so I didn’t eat it all, but I definitely had enough to complete the challenge.
Dish number 13 is definitely complete.
