Eggplant dish 9: Smoked bacon and raisin stuffed eggplants
I decided to try this recipe which involved putting the eggplants (cut in half) in the oven and cooking them for 30 min or so. The insides were then scooped out – omg how good do they look and then I cooked bacon, onion, garlic, pinenuts, tomato. I then mixed in breadcrumbs and put that mix back in the eggplant.
It then went back in the oven and once done I ate it. It was yum.
So way nine done with eggplant. Only 41 left to go this year. I’m running behind.
