Eggplant dish 8: Roasted char-grilled eggplant with couscous and peanut sauce

So I was meeting up with Guido at work the other day at G’s one of the local places on Nathan campus. It’s always good to chat with Guido about all things Aviation education, about his courses and about the upcoming conference.

OMG – they had a new menu with an eggplant recipe. I’m not a fan of couscous so was hesitant, but I’m so glad I chose the dish. It was amazing!

Char-grilled on the outside and amazingly soft on the inside. It may have needed a bit more peanut sauce.

So the couscous was fine, and quite nice. It had some nice veggies in it. I really liked the eggplant, but really wanted more peanut sauce as it was also very good. I also wanted to go back the next day to have it again. Needless to say I’ll be suggesting another catch up with Guido to chat about the conference I’m now at (or to eat more eggplant). 🙂

Only 42 more ways left with eggplant to go this year – a repeat doesn’t count. But it was so good I want to go back to G’s again.
