Eggplant dish 7: Lentil stuffed eggplant
Last weekend I decided to cook lunch for Timmy and we had this yummy lentil stuffed eggplant. It is about scooping all the eggplant out, and cooking it, adding in tomato, zucchini, onion, garlic and tomato paste and finally the lentils in a pan and cooking – it always smells yum. The mix is then put into the eggplant. Then it goes in the oven for 30-40 minutes – easy right.
Timmy isn’t super keen on eggplant but the dish got the seal of approval. It tasted yum even thought it doesn’t look that great.
As I said it doesn’t look great, but it did taste awesome. We both ate it happily. Only 43 more eggplant dishes to go this year – yes I’m still behind.
